This dish really tastes like sushi on a plate. Forget about struggling to make the perfect roll and enjoy the delicious ease of this recipe. By using the vegan mayonaise you can replace the greasy taste of salmon! You can add a lot of other ingredients and actually customize the sushi bowl as you like. You can use fried onions (best thing ever), edamame beans, pomegranate pits or even sesame seed!

Steps

1. Cook the rice according to package directions (or without them if you bought in bulk).

2. Mix the cooked rice with rice vinegar, soy sauce and seaweed.

3. Roast the chickpeas in the oven with the salt, paprika, cumin powder and garlic powder.

4. Cut the radishes, cucumber and carrots and mix them with the rice. Add the chickpeas.
